You Need To

  • 8 oz softened cream cheese
  • 1 tablespoon Butter, softened
  • 4 cups powdered sugar
  • 1 cup coconut, shredded
  • 2 cups Semi-Sweet Chocolate Chips
  • 1 tablespoon shortening
  • Chocolate syrup

How to make

  1. Line a half baking sheet with parchment paper, set aside
  2. In a medium bowl, using a hand mixer beat cream cheese and butter until blended
  3. Add powdered sugar and coconut and stir well until incorporated
  4. Refrigerate for about 1 hour or until easy to mold with hands
  5. Dust your hands with powdered sugar and mold coconut mixture into egg shapes
  6. Place coconut egg on parchment paper, do the same with the rest of the coconut mixture
  7. Place in the freezer for 1 hour or until eggs are firm
  8. Melt chocolate chips and shortening in the microwave by heating for 30 seconds then stirring and repeating the process until it is melted and smooth
  9. Using a fork, dip the egg into chocolate and flip to cover completely
  10. Tap the fork on the edge of the bowl or place them on a rack to remove the extra chocolate
  11. Place back on parchment paper
  12. Refrigerate until chocolate has set
  13. Drizzle chocolate syrup onto each egg if you desired
